Rhone - esque - waxy, textured and with lilacs and sunkissed apricots on the nose. Good weight on the mid palate, with well calculated acidity and a long finish. Max 3 bottles per customer


Tasting Notes

Another brilliant wine from Pieter Walser of course means another brilliant story. After meeting the owner of a company called Neural Science on a plane Pieter decided to make a wine with them and thus two new wines were born. The Limbic was made by hooking Pieter up to machines and seeing how he reacted to 21 different samples and then blending those he reacted to best together while the Orbitofrontal Cortex was made from the same 21 samples but without the influence of the machine. Try both and see which you like best conscious or subconscious! The final blend is: Piekenierskloof Grenache blanc, Swartland Clairette blanche, Swartland Fernão Pires, Elgin Semillon and Voor Paardeberg Verdelho.

Fruit on the nose, rather than the sea salt and garrigue of the Limbic. Gooseberry and guava, with a touch of caramel and sage. Rich and complex, just as interesting, but much less divisive. More orchestra in the Royal Albert than saxophonist on a street corner.
