This is exquisite winemaking by Tom Carson one of the world’s best winemakers. Tom, pictured below with his French wife, Nadège, has won best white and best red twice in Australia. This Chardonnay is so pure and lithe, it’s like drinking very fine St Aubin or Puligny – it’s not big and rich, it’s got crystalline purity. Brilliant for your cellar or for drinking now with fine white fish and shellfish. It’s a privilege to drink this fine wine. Magical.

A brilliant vintage in Mornington Penininsula.  The wine has a pristine, pure and intense aroma with classic notes of citrus blossom and grapefruit pith. The palate is fine and complex, with great poise and concentration of flavour.  Tightly wound together with a precise minerality, the wine has beautiful line and length. I Alcohol 12.5 %

An approach unrivalled by his peers
Tom has gone about the delimiting of the vineyards at Yabby Lake with the zeal of the Cistercian monks who mapped out the climats of Burgundy so assiduously a thousand years ago. He has divided the vineyard into no less than 90 blocks with 10 clones of Pinot Noir planted and 7 clones of Chardonnay. Each plot and clone is vinified and raised in the vineyard separately. Tom asked the owners to buy an unheard of number of small fermentation tanks when he arrived four years ago to make this possible. But it's only by raising each parcel and clone separately to be its very best that you can understand your vineyard. With possibly just 20 more years in charge he knows that he must squeeze out every ounce of potential and learning from each vintage. Tom is intellectual. If you want to truly raise the bar in wine you have to be. But don't let this front belie his passion. He is passionate, totally passionate about great wine and his pursuit to discover just how good Chardonnay and Pinot Noir can be in Australia in his life time. This is not ego trip to look good, it is a gift. He will one day be recognized as one of the greatest ever contributors to Australian wine.
